Ingredients:
- 4 large russet potatoes, thinly sliced
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 ½ cups shredded Irish cheddar cheese
- ½ cup salsa
- ½ cup sour cream
- 1 jalapeño, thinly sliced
- 2 green onions, chopped
- 4 strips crispy bacon, crumbled (optional)
Instructions:
- Preheat Oven – Preheat your oven to 400°F (200°C).
- Prepare Potatoes – Toss the thinly sliced potatoes with olive oil, salt, black pepper, and garlic powder. Spread them out on a baking sheet in a single layer.
- Bake – Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
- Add Cheese – Sprinkle shredded Irish cheddar over the potatoes and return them to the oven for another 5 minutes, or until the cheese melts.
- Top & Serve – Remove from the oven and top with salsa, sour cream, jalapeños, green onions, and bacon (if using). Serve immediately.
