IRISH CARAMEL SLICE

Description:  Indulge in layers of deliciousness with this classic Irish treat. A buttery biscuit base, creamy caramel center, and a decadent chocolate topping come together to create a mouthwatering dessert that’s perfect for any occasion.

Cooking time: 15 minutes (plus chilling time)

Serving size: 16 squares


Ingredients:

For the Biscuit Base:

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (125g) unsalted butter, melted
  • 1/3 cup (75g) granulated sugar

For the Caramel Layer:

  • 1/4 cup (60g) unsalted butter
  • 1/4 cup (60g) light brown sugar
  • 1 (14 oz) can sweetened condensed milk

For the Chocolate Topping:

  • 4 oz (115g) dark chocolate, chopped
  • 1 tablespoon unsalted butter
  •  

Instructions:

For the Biscuit Base:

  1. Preheat the oven to 350°F (175°C) and line a square baking pan (8×8 inches) with parchment paper, leaving an overhang for easy removal.

  2. In a bowl, combine the melted butter, sugar, and flour. Mix until well combined and press the mixture evenly into the prepared baking pan.

  3. Bake the biscuit base in the preheated oven for about 12-15 minutes, or until it’s lightly golden. Remove from the oven and let it cool.

 

For the Caramel Layer:

  1. In a saucepan, melt the butter over low heat. Add the brown sugar and condensed milk, and cook while stirring constantly until the mixture thickens and turns a caramel color. This will take about 5-7 minutes.

  2. Once the caramel is ready, pour it over the cooled biscuit base in the baking pan. Use a spatula to spread it evenly.

 

For the Chocolate Topping:

  1. In a microwave-safe bowl, combine the chopped dark chocolate and butter. Microwave in 20-second intervals, stirring after each interval, until the chocolate and butter are melted and smooth.

  2. Pour the melted chocolate over the caramel layer and spread it evenly using a spatula.

  3. Place the baking pan in the refrigerator and let the caramel slice chill for at least 2-3 hours, or until the chocolate topping is set.

  4. Once the caramel slice is fully chilled and set, use the parchment paper overhang to lift it out of the pan. Place it on a cutting board and slice into squares.
