DUBLINER CHEESE, SPINACH, AND HAM FRITTATA

Ingredients:

  • 8 large eggs
  • 1/4 cup milk or cream
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 2 cups fresh spinach leaves, roughly chopped
  • 1 cup cooked ham, diced
  • 1 cup Dubliner cheese, shredded
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Cooking spray or additional olive oil, for greasing

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined. Set aside.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, until fragrant.
  4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  5. Add the diced ham to the skillet and cook until heated through, about 2-3 minutes.
  6. Pour the egg mixture into the skillet, ensuring that the spinach, onions, and ham are evenly distributed.
  7. Sprinkle the shredded Dubliner cheese evenly over the top of the egg mixture.
  8. Cook the frittata on the stovetop for 3-4 minutes, until the edges begin to set.
  9. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set in the center and the top is golden brown.
  10. Remove the skillet from the oven and sprinkle the chopped parsley and chives over the top of the frittata.
