IRISH HONEY AND OAT SODA BREAD

Description: This traditional Irish soda bread is given a delicious twist with the addition of rich Irish honey, adding a subtle sweetness that complements the nutty oats. Ingredients

  • 250g (2 cups) wholemeal flour
  • 125g (1 cup) plain white flour
  • 75g (¾ cup) rolled oats, plus extra for topping
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp Irish honey
  • 300ml (1¼ cups) buttermilk
  • 1 tbsp melted butter (optional, for brushing)


Instructions

  1. Preheat the oven to 200°C (400°F) and lightly flour a baking tray.
  2. In a large bowl, mix the wholemeal flour, plain flour, oats, baking soda, and salt.
  3. In a separate bowl, whisk the buttermilk with the honey until well combined.
  4. Make a well in the dry ingredients and pour in the buttermilk mixture. Stir gently until a dough forms.
  5. Turn the dough onto a lightly floured surface and shape it into a round loaf. Place it on the prepared baking tray.
  6. Using a sharp knife, score a deep cross into the top of the loaf. Sprinkle with extra oats if desired.
  7. Bake for 35 minutes, or until the bread sounds hollow when tapped on the bottom.
  8. Brush the warm loaf with melted butter for a soft crust (optional). Allow to cool slightly before slicing.
  9. Serve warm with butter and an extra drizzle of Irish honey.
