IRISH CREAM PROFITEROLES

Ingredients:

For the Choux Pastry:

  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large eggs


For the Irish Cream Filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons Irish Cream liqueur


For the Chocolate Sauce:

  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream
  • 1 tablespoon Irish Cream liqueur


Instructions:

  1. Prepare the Choux Pastry:
    • Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
    • In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
    • Reduce heat to low and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
    • Remove from heat and let cool for 5 minutes.
    • Beat in eggs, one at a time, until smooth and glossy.
    • Transfer the choux pastry dough to a piping bag fitted with a large round tip.
    • Pipe small mounds of dough onto the prepared baking sheet, leaving space between each one.
    • Bake for 25-30 minutes or until golden brown and puffed. Remove from oven and let cool completely.
  2. Prepare the Irish Cream Filling:
    • In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
    • Gently fold in the Irish Cream liqueur until combined.
    • Transfer the Irish Cream filling to a piping bag fitted with a small round tip.
  3. Chill the Profiteroles:
    • Once cooled, place the baked choux pastry puffs in the refrigerator for 1 hour to chill.
  4. Assemble the Profiteroles:
    • Using a sharp knife, slice each chilled choux pastry puff in half horizontally.
    • Pipe a generous amount of Irish Cream filling onto the bottom half of each puff.
    • Place the top half of the puff back on top of the filling.
  5. Prepare the Chocolate Sauce:
    • In a small saucepan, heat the heavy cream until it just begins to simmer.
    • Remove from heat and add the dark chocolate chips. Let sit for 1-2 minutes, then stir until smooth.
    • Stir in the Irish Cream liqueur until well combined.
  6. Serve:
    • Drizzle the prepared chocolate sauce over the assembled profiteroles.
    • Serve the Irish Cream profiteroles immediately, and enjoy the luxurious combination of flavors with your loved ones!
