COLCANNON

Description: A traditional Irish dish made with mashed potatoes, cabbage or kale, and butter.

Preparation time: 20-30 minutes.

Cooking time: 30-40 minutes.

Serving size: 4-6 people.

  • 2 pounds of potatoes, peeled and chopped into small pieces
  • 1/2 head of green cabbage, finely shredded
  • 1/2 cup of milk
  • 1/4 cup of butter
  • 1/2 cup of chopped scallions or onions
  • Salt and pepper to taste
  1. Boil the chopped potatoes in a pot of salted water for 15-20 minutes, or until they are tender.
  2. Drain the potatoes and return them to the pot.
  3. Add the milk and butter to the pot, and mash the potatoes with a potato masher or fork until they are smooth and creamy.
  4. In a separate pot, cook the shredded cabbage in a small amount of boiling water for 5-7 minutes, or until it is tender.
  5. Drain the cabbage and add it to the pot with the mashed potatoes.
  6. Add the chopped scallions or onions to the pot and mix well.
  7. Season with salt and pepper to taste.
  8. Serve hot as a side dish with your favorite main course.
