IRISH SAUSAGE ROLLS

Description: These Irish Sausage Rolls are a classic pub snack, featuring seasoned pork sausage meat wrapped in flaky puff pastry. They’re perfect for parties, picnics, or as a hearty snack any time of day.

Preparation Time: 20 minutes

Cooking Time: 25 minutes

Serving Size: Makes 12 sausage rolls

Ingredients:

  • 500g pork sausage meat
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • 2 sheets of ready-rolled puff pastry
  • 1 egg, beaten (for egg wash)
  • Sesame seeds or poppy seeds for sprinkling (optional)

Instructions:

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

  2. In a mixing bowl, combine the pork sausage meat with chopped parsley, dried thyme, dried sage, salt, and pepper. Mix until well combined.

  3. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal rectangles.

  4. Divide the seasoned sausage meat into 12 portions. Roll each portion into a sausage shape and place it along the length of each pastry rectangle.

  5. Brush one edge of the pastry with beaten egg, then roll the pastry over the sausage meat to enclose it, pressing down gently to seal. Repeat with the remaining pastry and sausage meat.

  6. Place the sausage rolls seam-side down on the prepared baking tray. Brush the tops with more beaten egg and sprinkle with sesame seeds or poppy seeds if desired.

  7. Use a sharp knife to make shallow diagonal cuts across the top of each sausage roll, then bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the sausage meat is cooked through.

  8. Once baked, remove the sausage rolls from the oven and transfer them to a wire rack to cool slightly before serving. Enjoy these delicious Irish Sausage Rolls warm or at room temperature, with your favourite dipping sauce or chutney on the side.
