CHEESE POTATOES AND MUSHROOMS

Ingredients:

  • 4 large potatoes, peeled and diced
  • 8 ounces mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Place the diced potatoes in a large pot of boiling water and cook for 8-10 minutes, or until just tender. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the sliced mushrooms, diced onion, and minced garlic and cook for 5-7 minutes, or until the vegetables are softened.
  4. Add the flour to the skillet and stir to coat the vegetables. Cook for an additional 1-2 minutes.
  5. Gradually add the milk to the skillet, stirring constantly, until the mixture thickens and comes to a simmer.
  6. Remove the skillet from the heat and stir in the shredded cheddar cheese until it is melted and smooth. Season with salt and pepper to taste.
  7. Add the cooked potatoes to the skillet and stir to combine with the cheese sauce.
  8. Pour the mixture into the prepared baking dish and bake for 15-20 minutes, or until the top is golden brown and bubbly.
  9. Serve hot and enjoy!
