CASHEL BLUE AND APPLE TARTLETS

These Cashel Blue and Apple Tartlets bring together the tangy richness of Irish blue cheese and the natural sweetness of apples, all wrapped in buttery puff pastry. Perfect as a starter, elegant appetizer, or even a savory-sweet brunch treat, they celebrate the best of Irish artisan cheese in every bite.

Ingredients

  • 1 sheet of ready-rolled puff pastry (thawed if frozen)
  • 1 large eating apple (e.g., Braeburn or Pink Lady), thinly sliced
  • 100g Cashel Blue cheese, crumbled
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • 1 tbsp honey (optional, for drizzling)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Unroll the puff pastry and cut it into 6 equal rectangles or circles using a knife or pastry cutter.
  3. Place the pastry pieces on the prepared tray. Lightly score a border around each tartlet (about 1cm from the edge), being careful not to cut all the way through.
  4. Within each border, layer a few apple slices and top with crumbled Cashel Blue.
  5. Sprinkle with thyme leaves and lightly brush the pastry edges with the beaten egg.
  6. Bake for 18–20 minutes or until the pastry is puffed and golden and the cheese is bubbling.
  7. If desired, drizzle lightly with honey before serving warm.

  • Serve with a fresh green salad and walnuts for a light lunch.
  • Pair with a crisp white wine like Sauvignon Blanc or a chilled cider.
