IRISH BACON AND EGG PIE

Ingredients:

  • 1 pre-made pie crust
  • 6 strips of bacon, diced
  • 6 eggs
  • 1/2 cup milk
  • 1/4 cup chopped scallions
  • Salt and pepper to taste
  • 1/4 cup grated cheddar cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it into a 9-inch pie dish.
  3. In a large skillet, cook the bacon over medium heat until crispy.
  4. In a separate bowl, whisk together the eggs, milk, scallions, salt, and pepper.
  5. Pour the egg mixture into the pie crust.
  6. Sprinkle the bacon and grated cheese over the top of the egg mixture.
  7. Bake for 35-40 minutes or until the egg is set and the crust is golden brown.
  8. Let cool for a few minutes before slicing and serving.
