WHITE PUDDING

Description: White pudding is a type of sausage made from pork meat, fat, and breadcrumbs. It’s seasoned with spices and is a traditional Irish dish often enjoyed as part of a full Irish breakfast.

Ingredients:

  • 250g (9 oz) fresh pork fat
  • 500g (18 oz) fresh pork back fat
  • 250g (9 oz) breadcrumbs
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon dried herbs (such as thyme or parsley)
  • Pork casings (optional)

Instructions:

  1. Start by chopping the fresh pork fat and back fat into small pieces. If you’re using pork casings, prepare them by soaking in warm water.

  2. In a large mixing bowl, combine the chopped fats, breadcrumbs, finely chopped onion, salt, black pepper, ground mace, and dried herbs. Mix everything thoroughly.

  3. If you’re using casings, attach a sausage funnel to your sausage maker, and carefully feed the mixture into the casings.

  4. If you’re not using casings, you can shape the mixture into small patties or rolls.

  5. In a large, non-stick frying pan over medium heat, cook the white pudding until it’s golden brown and crispy. This usually takes about 10 minutes on each side.

  6. Once cooked, remove the white pudding from the pan and drain it on paper towels to remove any excess grease.

  7. Serve the white pudding hot as part of a traditional Irish breakfast, along with items like sausages, black pudding, eggs, and grilled tomatoes
