Aromatic and Golden-Roasted
Description: A beautifully aromatic roast chicken glazed with Irish whiskey, wholegrain mustard, butter, and herbs. The result is tender, golden meat with a rich, fragrant flavour perfect for Sunday dinner.

Ingredients
- 1 whole chicken (1.5–1.8 kg)
- 2 tbsp wholegrain mustard
- 2 tbsp Irish whiskey
- 2 tbsp honey or brown sugar
- 3 tbsp butter, softened
- 4 garlic cloves, crushed
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery sticks, chopped
- Fresh thyme or rosemary
- Salt & pepper
Instructions
Step 1 – Preheat
Preheat oven to 190°C (375°F).
Step 2 – Make the Glaze
Mix mustard, whiskey, honey, butter, and garlic. Season with salt and pepper.
Step 3 – Prepare the Chicken
Place chicken in a roasting tray. Rub glaze all over the skin and under the breast skin if possible.
Step 4 – Add Vegetables
Scatter onion, carrot, celery, and herbs around the chicken.
Step 5 – Roast
Roast for 1 hour 15 minutes, basting occasionally. Tent with foil if browning too fast.
Step 6 – Rest and Serve
Rest chicken 10 minutes before carving. Spoon pan juices over the meat.
Tips
- Jameson or any smooth Irish whiskey works well.
- Extra honey gives a deeper caramelised finish.
- Add a splash of whiskey to the tray for more aroma.
