VEGETARIAN GUINNESS STEW

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 bottle (12 ounces) Guinness beer (or any stout beer)
  • 2 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon thyme (dried or fresh)
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Chopped parsley for garnish (optional)


Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  2. Stir in diced carrots, celery, and mushrooms. Cook for 5-6 minutes until the vegetables start to soften.
  3. Add tomato paste and flour to the pot, stirring constantly for about 1 minute to coat the vegetables.
  4. Pour in the Guinness beer, scraping the bottom of the pot to deglaze it. Let it simmer for 2-3 minutes.
  5. Add vegetable broth, bay leaf, thyme, salt, and pepper. Bring the stew to a boil, then reduce the heat and let it simmer uncovered for 20-25 minutes until the vegetables are tender and the stew thickens.
  6. Add frozen peas and cook for an additional 2-3 minutes.
  7. Remove the bay leaf and adjust seasoning if needed.
  8. `Serve the Vegetarian Guinness Stew hot, garnished with chopped parsley if desired.
