IRISH SODA BREAD ROLLS

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • Sea salt or chopped herbs (rosemary, thyme, dill), for topping


Instructions:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the buttermilk to the dry ingredients, stirring until a soft dough forms.
  • Turn the dough out onto a lightly floured surface and gently knead for a minute until smooth.
  • Divide the dough into 8 equal portions and shape each portion into a round ball.
  • Place the dough balls onto the prepared baking sheet, leaving some space between each roll.
  • Use a sharp knife to score a shallow cross on the top of each roll.
  • Sprinkle the tops of the rolls with sea salt or chopped herbs.
  • Bake in the preheated oven for 18-20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.
  • Remove from the oven and transfer the rolls to a wire rack to cool slightly before serving.
  • Enjoy warm with butter or alongside your favorite cheeses and chutney.
