Ingredients
- 2 large potatoes, peeled and grated

- 1/4 teaspoon black pepper
- 1/4 cup milk
- 2 tablespoons unsalted butter, melted
- 8 ounces smoked salmon
- Fresh dill or chives for garnish
- Sour cream or crème fraîche (optional, for serving)
Instructions:
- In a large bowl, combine the grated potatoes, mashed potatoes, flour, baking powder, salt, and black pepper. Mix well until the ingredients are evenly distributed.
- Gradually add the milk and melted butter to the potato mixture, stirring as you go. The consistency should be thick but still drop from a spoon. Adjust the milk as needed.
- Heat a large non-stick skillet or griddle over medium heat. Add a little oil or butter to the pan.
- Drop spoonfuls of the potato mixture onto the hot skillet, using the back of the spoon to spread them out into rounds, about 3-4 inches in diameter.
- Cook the potato cakes for about 4-5 minutes on each side or until they are golden brown and crispy.
- While the potato cakes are cooking, thinly slice the smoked salmon into strips or small pieces.
- Once the potato cakes are done, remove them from the pan and let them drain on a paper towel to remove any excess oil.
- To serve, place a generous amount of smoked salmon on top of each potato cake. Garnish with fresh dill or chives.
- If desired, accompany the dish with a dollop of sour cream or crème fraîche for extra creaminess.
