IRISH FISH PIE

Ingredients:

  • 1 1/2 lbs (680g) mixed fish fillets (salmon, cod, haddock), cut into chunks
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 leek, sliced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups (360ml) fish or vegetable stock
  • 1/2 cup (120ml) white wine (optional)
  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cut into chunks
  • 1/4 cup (60g) butter
  • 1/4 cup (60ml) milk
  • Grated cheese (optional, for topping)


Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Boil the potatoes in a pot of salted water until tender. Drain and mash them with butter and milk. Set aside.
  3. In a large skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion, carrots, celery, and leek. Cook for about 5 minutes until softened.
  4. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes.
  5. Gradually pour in the fish or vegetable stock and white wine (if using), stirring constantly to avoid lumps.
  6. Add the fish chunks to the skillet, simmer for about 5 minutes until the fish is almost cooked through.
  7. Stir in the heavy cream and chopped parsley. Season with salt and pepper to taste.
  8. Transfer the fish mixture to a baking dish. Spread the mashed potatoes over the top, covering the fish completely.
  9. Optional: Sprinkle grated cheese over the mashed potatoes for a golden topping.
  10. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the filling is bubbling.
  11. Serve the Irish Fish Pie hot, garnished with extra parsley if desired.
