IRISH POTATO STUFFING

Description: A stuffing made with mashed potatoes, onions, herbs, and spices, used for stuffing poultry or served as a side dish.

Preparation time: 15 minutes

Cooking time: 30 minutes

Serving size: 6-8

  • 6 medium-sized potatoes, peeled and cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs
  • 1/4 cup melted butter
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the cubed potatoes in salted water until they are soft and easily mashed. Drain the water and mash the potatoes until they are smooth.
  3. In a separate pan, sauté the chopped onions and minced garlic in olive oil until they are soft and translucent.
  4. Add the sautéed onions and garlic to the mashed potatoes, along with the dried thyme, dried sage, salt, and pepper. Mix everything together until it is well combined.
  5. Grease a baking dish with some melted butter. Spoon the potato mixture into the dish, smoothing it out into an even layer.
  6. Top the potato mixture with breadcrumbs, then drizzle the melted butter on top.
  7. Bake the potato stuffing in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
  8. Serve hot as a side dish with your favorite meats or vegetables.
