IRISH CREAM BUNDT CAKE

Ingredients:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup Irish cream liqueur (e.g., Baileys)
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Glaze:

  • 1/4 cup Irish cream liqueur
  • 1/2 cup confectioners’ sugar

 

Instructions:

  1. Preheat your oven to 325°F (160°C) and grease a Bundt cake pan.
  2. In a bowl, mix together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated.
  5. Mix in the Irish cream liqueur and vanilla extract.
  6. Gradually add the dry ingredients, alternating with buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared Bundt pan and spread it evenly.
  8. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.

For the Glaze:

  1. In a small bowl, whisk together the Irish cream liqueur and confectioners’ sugar until smooth.
  2. Drizzle the glaze over the cooled cake.
