BREAD SAUCE

Description: Bread sauce is a creamy, comforting sauce infused with aromatics, perfect for complementing roast poultry, especially during the festive season.

Ingredients:

  • 1 onion, peeled and halved
  • 6-8 whole cloves
  • 2 bay leaves
  • 500ml whole milk
  • 100g fresh white breadcrumbs
  • 50g unsalted butter
  • Salt and freshly ground black pepper
  • Pinch of nutmeg (optional)

 

Instructions:

  • Infuse the Milk:
    • Stud the onion halves with cloves and place them in a saucepan with the bay leaves and milk.
    • Gently heat the milk mixture over low heat, allowing it to simmer without boiling, for about 20 minutes to infuse flavors. Stir occasionally.
  • Prepare Breadcrumbs:
    • In a separate pan, melt the butter over low heat.
    • Add the breadcrumbs to the melted butter and cook gently, stirring constantly until they turn golden brown and crisp. This should take about 5 minutes. Set aside.
  • Strain and Finish the Sauce:
    • Remove the onion halves and bay leaves from the infused milk, discarding them.
    • Gradually add the toasted breadcrumbs to the milk, stirring continuously to create a smooth sauce.
  • Season and Serve:
    • Season the sauce with salt, pepper, and a pinch of nutmeg if desired.
    • Allow the sauce to simmer for another 5 minutes, ensuring it thickens to a creamy consistency.
  • Serve Warm:
    • Bread sauce is traditionally served warm alongside roast poultry. It pairs wonderfully with roasted turkey, chicken, or game.
