- 4 tablespoons unsalted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1/4 cup all-purpose flour
- 2 cups vegetable broth
- 1 cup Irish ale
- 2 cups shredded Irish cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until they soften.
- Add the carrots and celery and sauté for 5-7 minutes until they start to soften.
- Sprinkle the flour over the vegetables and stir to combine.
- Add the vegetable broth and ale and stir to combine.
