IRISH CABBAGE SOUP

Description: Irish cabbage soup is a hearty and comforting soup made with simple and nutritious ingredients. It typically includes cabbage, potatoes, onions, and carrots, cooked in chicken or vegetable broth, and seasoned with salt and black pepper. The soup can be served as a starter or a main course, and is often accompanied by a slice of crusty bread or Irish soda bread.   • 1 head of green cabbage, chopped
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 2 medium-sized potatoes, peeled and diced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • Salt and pepper to taste

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.

  2. Add the chopped cabbage and potatoes to the pot, and stir to combine with the onions and garlic. Cook for another 5 minutes, stirring occasionally.

  3. Add the chicken or vegetable broth to the pot and bring the mixture to a simmer. Cover the pot and let the soup cook for 30-40 minutes, or until the cabbage and potatoes are tender.

  4. Using an immersion blender, puree the soup until it is smooth and creamy. Alternatively, you can transfer the soup to a blender and puree it in batches.

  5. Return the pureed soup to the pot and stir in the heavy cream. Heat the soup over medium-low heat until it is heated through, about 5-10 minutes.

  6. Season the soup with salt and pepper to taste. Serve hot, garnished with fresh parsley or croutons if desired.
