Ingredients:

  • 4 crusty rolls
  • 8 pork sausages
  • 8 rashers (Irish bacon or thick-cut bacon)
  • 4 slices black pudding
  • 4 slices white pudding
  • 4 eggs

  • Salt and pepper, to taste
  • Optional: ketchup or brown sauce


Instructions:

Cook the Sausages:

  • Preheat your grill or stovetop grill pan over medium heat.
  • Cook the sausages, turning occasionally, for about 10-12 minutes or until fully cooked and browned. Remove from heat and keep warm.

 

Cook the Rashers and Puddings:

  • In the same grill or a separate skillet, cook the rashers for about 4-5 minutes on each side until crispy. Remove and keep warm.
  • Cook the black and white pudding slices for about 3-4 minutes on each side until browned and crispy. Remove and keep warm.

 

Fry the Eggs:

  • In a separate skillet, heat a small amount of butter or cooking oil over medium heat.
  • Crack the eggs into the skillet and fry until the whites are set and the yolks are cooked to your liking. Season with salt and pepper.

 

Assemble the Rolls:

  • Slice the crusty rolls in half and toast them lightly if desired.
  • Layer 2 cooked sausages, 2 rashers, 1 slice of black pudding, 1 slice of white pudding, and 1 fried egg in each roll.
  • Add ketchup or brown sauce if desired.
