IRISH POTATO CAKES WITH SMOKED SALMON

Description: Irish Potato Cakes, also known as “Boxty,” are a traditional Irish dish made with grated potatoes, flour, and sometimes mashed potatoes. When paired with smoked salmon, they create a delightful combination of flavors, making it a popular choice for brunch or light meals.

Ingredients

  • 2 large potatoes, peeled and grated
  • 1 cup mashed potatoes (leftover or freshly made)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 2 tablespoons unsalted butter, melted
  • 8 ounces smoked salmon
  • Fresh dill or chives for garnish
  • Sour cream or crème fraîche (optional, for serving)

 

Instructions:

  1. In a large bowl, combine the grated potatoes, mashed potatoes, flour, baking powder, salt, and black pepper. Mix well until the ingredients are evenly distributed.
  2. Gradually add the milk and melted butter to the potato mixture, stirring as you go. The consistency should be thick but still drop from a spoon. Adjust the milk as needed.
  3. Heat a large non-stick skillet or griddle over medium heat. Add a little oil or butter to the pan.
  4. Drop spoonfuls of the potato mixture onto the hot skillet, using the back of the spoon to spread them out into rounds, about 3-4 inches in diameter.
  5. Cook the potato cakes for about 4-5 minutes on each side or until they are golden brown and crispy.
  6. While the potato cakes are cooking, thinly slice the smoked salmon into strips or small pieces.
  7. Once the potato cakes are done, remove them from the pan and let them drain on a paper towel to remove any excess oil.
  8. To serve, place a generous amount of smoked salmon on top of each potato cake. Garnish with fresh dill or chives.
  9. If desired, accompany the dish with a dollop of sour cream or crème fraîche for extra creaminess.
