IRISH BEEF AND GUINNESS LASAGNA

Ingredients:

  • 1 lb (450g) beef stew meat, cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup Guinness stout
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 9 lasagna noodles, cooked according to package instructions
  • 2 cups Irish cheddar cheese, grated
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon ground nutmeg
  • Fresh parsley, chopped, for garnish


Instructions:

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  • In a large Dutch oven or pot, heat some oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  • In the same pot, add the chopped onion, minced garlic, diced carrots, and diced celery. Cook until the vegetables are softened, about 5 minutes.
  • Return the browned beef to the pot. Pour in the Guinness stout, beef broth, tomato paste, and dried thyme. Season with salt and pepper to taste. Bring the mixture to a simmer, then cover and cook over low heat for about 1 1/2 to 2 hours, or until the beef is tender and the sauce has thickened.
  • In a separate saucepan, melt the butter over medium heat. Stir in the flour to form a roux, and cook for 1-2 minutes until golden brown.
  • Gradually whisk in the milk until smooth. Cook the sauce, stirring constantly, until it thickens and coats the back of a spoon. Season with ground nutmeg, salt, and pepper.
  • To assemble the lasagna, spread a thin layer of the beef and Guinness mixture on the bottom of the prepared baking dish. Top with a layer of cooked lasagna noodles, followed by a layer of the creamy Irish cheddar cheese sauce. Repeat the layers, finishing with a layer of cheese sauce on top.
  • Sprinkle the grated Irish cheddar cheese over the top of the lasagna. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the lasagna is golden brown on top.
