IRISH APPLE CIDER SAUCE

Ingredients:

  • 1 cup apple cider
  • 1/2 cup chicken or vegetable stock
  • 1 tablespoon apple cider vinegar
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)

 

Instructions:

Prepare the Base:

  • In a medium saucepan, melt the butter over medium heat. Add the chopped shallot and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.

Create the Roux:

  • Sprinkle the flour over the shallot and garlic mixture, stirring continuously to form a roux. Cook for about 1-2 minutes until the flour is lightly browned.

Add Liquids:

  • Gradually whisk in the apple cider and chicken or vegetable stock, ensuring there are no lumps. Bring the mixture to a simmer.

Incorporate Mustard and Vinegar:

  • Stir in the Dijon mustard and apple cider vinegar. Continue to simmer the sauce, stirring occasionally, until it thickens and reduces by about half, approximately 15 minutes.

Seasoning:

  • Season the sauce with salt and pepper to taste. If desired, add a sprig of fresh thyme for additional flavor.

Final Touches:

  • Once the sauce has reached your desired consistency, remove it from the heat. Strain the sauce through a fine mesh sieve to remove the shallot and garlic pieces, resulting in a smooth texture.

Serve:

  • Pour the cider sauce over your choice of cooked meat, such as pork, roasted chicken, or grilled fish. Garnish with additional fresh thyme if desired.
