GUINNESS STEW

Description: A hearty beef stew made with Guinness beer, vegetables, and herbs.

Preparation time: Approximately 20 minutes.

Cooking time: Approximately 2-3 hours.

Serving size: This recipe makes 6-8 servings.

Ingredients:

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • Salt and freshly ground black pepper
  • 3 tablespoons olive oil, divided
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup Guinness or other stout beer
  • 1 pound carrots, peeled and sliced
  • 1 pound potatoes, peeled and cubed
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Chopped fresh parsley, for garnish

Instructions:

  1. Season the beef cubes with salt and pepper.
  2. In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat.
  3. Add the beef and cook until browned on all sides, about 5-7 minutes.
  4. Remove the beef from the pot and set it aside on a plate.
  5. Add the remaining tablespoon of olive oil to the pot and add the chopped onion.
  6. Cook the onion until it’s softened, about 5-7 minutes.
  7. Add the minced garlic and cook for another 30 seconds.
  8. Add the tomato paste and flour to the pot and stir until everything is well combined.
  9. Gradually add the beef broth and Guinness, stirring constantly.
  10. Add the beef back into the pot along with the carrots, potatoes, thyme, and bay leaf.
  11. Bring the stew to a simmer and cover the pot.
  12. Cook for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
  13. Remove the bay leaf from the stew and season with additional salt and pepper, if needed.
  14. Serve the stew hot, garnished with chopped parsley.
