Ingredients:
- 2 pounds beef chuck roast, cut into 1-inch cubes
- Salt and freshly ground black pepper
- 3 tablespoons olive oil, divided
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup Guinness or other stout beer
- 1 pound carrots, peeled and sliced
- 1 pound potatoes, peeled and cubed
- 2 teaspoons dried thyme
- 1 bay leaf
- Chopped fresh parsley, for garnish
Instructions:
- Season the beef cubes with salt and pepper.
- In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat.
- Add the beef and cook until browned on all sides, about 5-7 minutes.
- Remove the beef from the pot and set it aside on a plate.
- Add the remaining tablespoon of olive oil to the pot and add the chopped onion.
- Cook the onion until it’s softened, about 5-7 minutes.
- Add the minced garlic and cook for another 30 seconds.
- Add the tomato paste and flour to the pot and stir until everything is well combined.
- Gradually add the beef broth and Guinness, stirring constantly.
- Add the beef back into the pot along with the carrots, potatoes, thyme, and bay leaf.
- Bring the stew to a simmer and cover the pot.
- Cook for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
- Remove the bay leaf from the stew and season with additional salt and pepper, if needed.
- Serve the stew hot, garnished with chopped parsley.
