DUBLINER CHEESE AND GUINNESS DIP

Description: This rich and flavorful dip combines the sharp, nutty taste of Dubliner cheese with the deep, malty flavors of Guinness stout. Perfect for parties or as an indulgent appetizer, this dip pairs wonderfully with crusty bread, pretzels, or vegetables.

Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup Guinness stout
  • 1 cup heavy cream
  • 2 cups shredded Dubliner cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)


Instructions:

  1. Melt the Butter:
    • In a medium saucepan, melt the butter over medium heat.

  2. Make the Roux:
    • Add the flour to the melted butter and whisk constantly for about 2 minutes until the mixture is golden and bubbly.

  3. Add Guinness:
    • Slowly pour in the Guinness stout, whisking continuously to avoid lumps. Cook for about 2-3 minutes until the mixture thickens.

  4. Add Cream:
    • Gradually add the heavy cream, continuing to whisk until the mixture is smooth and begins to simmer.

  5. Add Cheese and Seasonings:
    • Reduce the heat to low and slowly stir in the shredded Dubliner cheese until fully melted and smooth. Add the Dijon mustard, Worcestershire sauce, and garlic powder. Season with salt and pepper to taste.

  6. Serve:
    • Transfer the dip to a serving bowl and garnish with chopped chives, if desired. Serve warm with crusty bread, pretzels, or your favorite dipping vegetables.
