DUBLINER CHEESE AND BACON POTATO SKINS

Description: These Dubliner cheese and bacon potato skins are a delicious and comforting appetizer or snack. Crispy potato skins filled with melted Dubliner cheese, crispy bacon, and a dollop of sour cream make for an irresistible treat.

Ingredients:

  • 4 large baking potatoes
  • 200g (about 7 oz) Dubliner cheese, grated
  • 6 slices of bacon, cooked until crispy and crumbled
  • 2 tablespoons chopped chives or green onions, for garnish
  • Sour cream, for serving
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 200°C (400°F). Scrub the potatoes clean and pat them dry with paper towels.
  2. Prick the potatoes all over with a fork, then place them directly on the oven rack and bake for 1 hour or until they are tender when pierced with a fork.
  3. Remove the potatoes from the oven and let them cool slightly until they are safe to handle.
  4. Cut each potato in half lengthwise, then scoop out the flesh, leaving about ¼ inch of potato attached to the skin. Reserve the potato flesh for another use.
  5. Place the potato skins on a baking sheet lined with parchment paper, skin side down.
  6. Sprinkle grated Dubliner cheese evenly inside each potato skin, then top with the crumbled bacon.
  7. Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and sprinkle with chopped chives or green onions.
  9. Serve the Dubliner cheese and bacon potato skins hot, with a dollop of sour cream on top, and enjoy this delicious appetizer with friends and family!
