CORNED BEEF AND CABBAGE SLIDERS

Description: These Corned Beef and Cabbage Sliders are a delicious twist on the classic Irish dish, perfect for any gathering or celebration. Tender corned beef, tangy cabbage slaw, creamy mustard aioli, and pickled red onions are sandwiched between soft brioche buns for a flavorful and satisfying bite.

Ingredients:

  • 1 (3-4 pound) corned beef brisket
  • 12 brioche slider buns
  • 2 cups shredded green cabbage
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons whole grain mustard
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 small red onion, thinly sliced
  • 1/2 cup white vinegar
  • 2 tablespoons sugar


Instructions:

  • Prepare the Corned Beef: Place the corned beef brisket in a slow cooker and cover with water. Cook on low heat for 6-8 hours, or until the beef is tender and easily shreds with a fork. Once cooked, remove from the slow cooker and thinly slice the corned beef against the grain.
  • Make the Cabbage Slaw: In a large mixing bowl, combine the shredded cabbage, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Toss until the cabbage is well coated in the dressing. Set aside to marinate while you prepare the other ingredients.
  • Prepare the Whole Grain Mustard Aioli: In a small bowl, whisk together the mayonnaise, whole grain mustard, minced garlic, and lemon juice until smooth and creamy. Adjust the seasoning with salt and pepper to taste. Set aside.
  • Quick-Pickle the Red Onions: In a small saucepan, combine the sliced red onions, white vinegar, sugar, and a pinch of salt. Bring to a simmer over medium heat, then reduce the heat and cook for 1-2 minutes, or until the onions are slightly softened. Remove from heat and let cool to room temperature.
  • Assemble the Sliders: Slice the brioche slider buns in half horizontally. Spread a generous amount of the whole grain mustard aioli on the bottom half of each bun. Top with a few slices of the cooked corned beef, followed by a spoonful of the cabbage slaw and some pickled red onions. Place the top half of the bun on top to complete the sliders.
