Ingredients
- 200g plain flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp mixed spice
- 2 tbsp brown sugar
- 1 egg
- 300ml whole milk
- 1 tsp vanilla extract
- 100g mixed dried fruit (sultanas, raisins, currants)
- 100ml hot black tea (for soaking fruit)
- Butter or oil for frying
Instructions
- Place the dried fruit in a bowl and pour over the hot tea. Let soak for 30 minutes, then drain and set aside.
- In a mixing bowl, combine the flour, baking powder, cinnamon, mixed spice, and brown sugar.
- In a separate bowl, beat the egg, then add the milk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the soaked fruit.
- Heat a non-stick frying pan over medium heat and lightly grease with butter or oil.
- Spoon the batter onto the pan (roughly 2 tablespoons per pancake). Cook until bubbles appear on the surface, then flip and cook until golden on both sides.
- Repeat until all the batter is used. Serve warm with butter, syrup, or a dusting of icing sugar.
