Ingredients:
- 1 kg (about 2.2 lbs) cooking apples, peeled, cored, and chopped
- 2 medium onions, finely chopped
- 250 g (1¼ cups) brown sugar
- 250 ml (1 cup) Guinness stout
- 200 ml (¾ cup + 1 tbsp) apple cider vinegar
- 150 g (1 cup) raisins or sultanas
- 1 tbsp grated fresh ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions:
- Prepare the fruit and veg: In a large, heavy-bottomed pot, combine the chopped apples, onions, and raisins.
- Add liquids and spices: Pour in the Guinness and cider vinegar, then add the brown sugar, ginger, cinnamon, cloves, salt, and pepper. Stir well to combine.
- Simmer low and slow: Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for about 1 hour 15 minutes, stirring occasionally, until the chutney is thick and sticky. Be sure to stir more frequently near the end to prevent sticking.
- Jar it up: While the chutney is still hot, spoon it into sterilised jars and seal tightly. Allow to cool before storing.
- Mature for best flavor: For best results, let the chutney mature in a cool, dark place for at least 2 weeks before opening. The flavors deepen and mellow beautifully over time.
