BAKED LEEKS WITH IRISH CHEDDAR CRUMB

Ingredients

Leeks

  • 4 large leeks, trimmed and halved lengthways
  • 1 tbsp butter
  • 200ml milk or light cream
  • 1 tsp wholegrain mustard
  • Salt and black pepper, to taste

Cheddar Crumb Topping

  • 60g fresh breadcrumbs
  • 80g Irish cheddar, grated
  • 1 tbsp butter, melted
  • Optional: pinch of nutmeg or thyme

Instructions

Step 1 – Cook the Leeks

Bring a wide pan of salted water to a gentle boil. Add the leeks and cook for 8–10 minutes until just tender. Drain well and allow excess moisture to evaporate.

Step 2 – Make the Sauce

Melt butter in a small saucepan. Stir in milk or cream and mustard, then season lightly with salt and pepper.

Step 3 – Assemble the Dish

Arrange the leeks in a buttered baking dish. Pour over the warm sauce.

Step 4 – Add the Crumb Topping

Mix breadcrumbs with grated cheddar, melted butter, and optional seasoning. Sprinkle evenly over the leeks.

Step 5 – Bake

Bake at 190°C (375°F) for 25–30 minutes until bubbling and golden on top.

Step 6 – Serve

Allow to rest for 5 minutes before serving.

Tips

  • Drain well: Excess water from leeks can thin the sauce.
  • Cheese choice: Mature Irish cheddar gives the best flavour.
  • Extra richness: Add a spoon of cream fraiche to the sauce.
  • Make ahead: Assemble in advance and bake just before serving.

Serving Suggestion

Serve as a side with roast chicken, pork, or lamb, or enjoy on its own with a green salad.
