Ingredients
Leeks
- 4 large leeks, trimmed and halved lengthways
- 1 tbsp butter
- 200ml milk or light cream
- 1 tsp wholegrain mustard
- Salt and black pepper, to taste
Cheddar Crumb Topping
- 60g fresh breadcrumbs
- 80g Irish cheddar, grated
- 1 tbsp butter, melted
- Optional: pinch of nutmeg or thyme
Instructions
Step 1 – Cook the Leeks
Bring a wide pan of salted water to a gentle boil. Add the leeks and cook for 8–10 minutes until just tender. Drain well and allow excess moisture to evaporate.
Step 2 – Make the Sauce
Melt butter in a small saucepan. Stir in milk or cream and mustard, then season lightly with salt and pepper.
Step 3 – Assemble the Dish
Arrange the leeks in a buttered baking dish. Pour over the warm sauce.
Step 4 – Add the Crumb Topping
Mix breadcrumbs with grated cheddar, melted butter, and optional seasoning. Sprinkle evenly over the leeks.
Step 5 – Bake
Bake at 190°C (375°F) for 25–30 minutes until bubbling and golden on top.
Step 6 – Serve
Allow to rest for 5 minutes before serving.
