- 250g (2 cups) wholemeal flour
- 125g (1 cup) plain white flour
- 75g (¾ cup) rolled oats, plus extra for topping
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp Irish honey
- 300ml (1¼ cups) buttermilk
- 1 tbsp melted butter (optional, for brushing)
Instructions
- Preheat the oven to 200°C (400°F) and lightly flour a baking tray.
- In a large bowl, mix the wholemeal flour, plain flour, oats, baking soda, and salt.
- In a separate bowl, whisk the buttermilk with the honey until well combined.
- Make a well in the dry ingredients and pour in the buttermilk mixture. Stir gently until a dough forms.
- Turn the dough onto a lightly floured surface and shape it into a round loaf. Place it on the prepared baking tray.
- Using a sharp knife, score a deep cross into the top of the loaf. Sprinkle with extra oats if desired.
- Bake for 35 minutes, or until the bread sounds hollow when tapped on the bottom.
- Brush the warm loaf with melted butter for a soft crust (optional). Allow to cool slightly before slicing.
