Description: Boxty dumplings are a traditional Irish dish made from a mixture of grated and mashed potatoes combined with flour and seasonings. Ingredients:

  • 1 cup raw grated potatoes
  • 1 cup mashed potatoes
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk
  • 1 tbsp melted butter
  • Water or broth, for boiling

 

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the grated potatoes and mashed potatoes. Squeeze out any excess liquid from the grated potatoes using a clean kitchen towel or cheesecloth.
    • Add the flour, baking powder, salt, and pepper to the potato mixture. Stir in the milk and melted butter until a soft dough forms.

  2. Shape the Dumplings:
    • Lightly flour your hands and shape the dough into small balls, about the size of a walnut.

  3. Boil the Dumplings:
    • Bring a large pot of water or broth to a boil. Reduce the heat to a gentle simmer. Carefully drop the dumplings into the simmering liquid.
    • Cook the dumplings for about 10-15 minutes, or until they are firm and cooked through. They should float to the surface when done.
  4. Serve:
    • Remove the dumplings with a slotted spoon and drain on a paper towel. Serve hot with your choice of sauce or add them to soups and stews.
