DUBLINER CHEESE AND POTATO TART

Ingredients:

  • 1 refrigerated pie crust
  • 2 cups peeled and thinly sliced potatoes
  • 1 cup grated Dubliner cheese
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 3 eggs
  • 1 cup heavy cream
  • Chopped fresh parsley for garnish (optional)


Instructions:

  • Preheat your oven to 375°F (190°C). Roll out the pie crust and press it into a greased tart pan. Prick the bottom of the crust with a fork and bake for 10 minutes, then set aside.
  • In a skillet, melt the butter over medium heat. Add the sliced onions and cook until they are soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  • Layer the thinly sliced potatoes evenly over the partially baked pie crust. Sprinkle the Dubliner cheese over the potatoes, then top with the sautéed onions and garlic. Season with dried thyme, salt, and pepper.
  • In a mixing bowl, whisk together the eggs and heavy cream until well combined. Pour the egg mixture over the tart, ensuring it covers all the ingredients.
  • Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
