Description: Colcannon Croquettes are a delightful twist on the traditional Irish dish colcannon.   • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying


Instructions:

1. Forming the Croquettes:

  • In a mixing bowl, combine the leftover colcannon with half of the breadcrumbs. Season with salt and pepper to taste.
  • Take a portion of the mixture and shape it into a small patty or croquette. Repeat until all the mixture is used.

2. Coating the Croquettes:

  • Dip each colcannon patty into the beaten eggs, ensuring an even coating.
  • Roll the patties in the remaining breadcrumbs, making sure they are fully covered.

3. Preparing for Frying:

  • Heat vegetable oil in a skillet or frying pan over medium heat until it reaches around 350°F (175°C).

4. Frying the Croquettes:

  • Carefully place the coated colcannon croquettes into the hot oil, cooking until each side is golden brown and crispy. This usually takes about 3-4 minutes per side.

5. Draining Excess Oil:

  • Once cooked, transfer the croquettes to a plate lined with paper towels to drain any excess oil.
