IRISH CHEDDAR AND ALE SOUP

Description: Irish Cheddar and Ale Soup is a hearty soup made with Irish cheddar cheese, ale, and vegetables. It’s a comforting dish that is perfect for a cold winter day.

  • 4 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/4 cup all-purpose flour
  • 2 cups vegetable broth
  • 1 cup Irish ale
  • 2 cups shredded Irish cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic and sauté for 2-3 minutes until they soften.
  3. Add the carrots and celery and sauté for 5-7 minutes until they start to soften.
  4. Sprinkle the flour over the vegetables and stir to combine.
  5. Add the vegetable broth and ale and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes.
  7. Add the shredded cheddar cheese to the pot and stir until it melts.
  8. Season with salt and pepper to taste.
  9. Serve the soup garnished with fresh parsley.
