Wild Garlic & Potato Soup – A Seasonal and Fragrant Irish Spring Dish

Ingredients
- 1 tbsp butter or olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 300g (10 oz) potatoes, peeled and diced
- 750ml (3 cups) vegetable stock
- 100g (3.5 oz) wild garlic leaves, washed and roughly chopped
- 100ml (½ cup) cream or milk
- Salt and freshly ground black pepper
- Fresh herbs or wild garlic flowers, for garnish
Instructions
Step 1 – Sauté the Aromatics
In a large pot, melt butter over medium heat. Add the onion and garlic, cooking gently until softened but not browned.
Step 2 – Add the Potatoes and Stock
Stir in the diced potatoes and pour in the vegetable stock. Bring to a simmer and cook for 15–20 minutes until the potatoes are tender.
Step 3 – Add the Wild Garlic
Add the wild garlic leaves and cook for another 2–3 minutes, just until wilted. Remove from heat.
Step 4 – Blend and Finish
Blend the soup until smooth using a hand blender. Stir in the cream or milk, season to taste, and warm through gently before serving.
Step 5 – Serve
Pour into bowls and garnish with a drizzle of cream and a few wild garlic flowers or herbs for a fresh finish.
