VEGETARIAN IRISH STEW

Description: Vegetarian Irish Stew is a hearty and flavorful stew that replaces traditional meat with wholesome vegetables and savory herbs, resulting in a comforting and satisfying meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 large carrots, peeled and sliced
  • 4 large potatoes, peeled and cubed
  • 2 parsnips, peeled and sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup green or brown lentils
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

 

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for a few minutes until they become translucent.
  2. Add the carrots, potatoes, parsnips, and celery to the pot. Stir and cook for about 5 minutes.
  3. Pour in the vegetable broth and add the lentils, bay leaves, and thyme. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 30-35 minutes, or until the vegetables and lentils are tender.
  5. Once the stew is cooked, remove the bay leaves.
  6. Taste and adjust the seasoning if needed.
  7. Serve the Vegetarian Irish Stew hot, garnished with chopped fresh parsley if desired.
