SPICY IRISH SAUSAGES

Description: Spicy Irish sausages are a flavorful twist on the classic Irish bangers, packed with a blend of spices and herbs like paprika, cayenne, and thyme. These sausages bring a mild heat that pairs perfectly with traditional Irish sides like colcannon or soda bread.

Preparation Time: 20 minutes (plus chilling time)

Cooking Time: 15-20 minutes

Serving Size: Makes about 8 sausages (serves 4)


Ingredients:

  • 1 lb ground pork
  • 1/2 tsp ground paprika
  • 1/2 tsp cayenne pepper (adjust for more or less heat)
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • Sausage casings (optional)

 

Instructions:

  1. In a large bowl, combine the ground pork, spices, breadcrumbs, and egg. Mix well until all the ingredients are evenly distributed.
  2. If using casings, stuff the sausage mixture into the casings and twist into 4-6 inch links. If not, form the mixture into sausage-shaped patties.
  3. Let the sausages chill in the refrigerator for at least 30 minutes to firm up.
  4. Heat a skillet over medium heat and cook the sausages for 15-20 minutes, turning occasionally, until they are golden brown and cooked through.
  5. Serve hot with traditional sides like mashed potatoes, colcannon, or a hearty Irish stew.
