Ingredients
- 800g floury potatoes, peeled and chopped
- 200g shredded kale or cabbage
- 75g butter
- 100ml cream or milk
- 200g smoked salmon, flaked
- 150g Irish cheddar, grated
- Salt and white pepper
Instructions
Step 1 – Make the Colcannon
Boil potatoes until tender. Drain and mash with butter and cream. Stir in kale until wilted. Season well.
Step 2 – Add Salmon and Cheese
Fold in smoked salmon and half of the cheese.
Step 3 – Bake
Spoon into a buttered baking dish, sprinkle with remaining cheese, and bake at 190°C (375°F) for 25–30 minutes until golden.
Serving Suggestion
Serve with green vegetables or as a luxurious side to roast meats.
