SMOKED SALMON AND IRISH CHEESE OMELETTE

Ingredients:

  • 3 large eggs
  • 1 tbsp butter
  • 2 oz smoked salmon, thinly sliced
  • 2 tbsp Irish cheddar, grated
  • 1 tbsp chopped chives
  • Salt and pepper to taste


Instructions:

  1. Beat the eggs in a bowl and season with salt and pepper.
  2. Heat the butter in a pan over medium heat.
  3. Pour the eggs into the pan and let them cook until they start to set.
  4. Add the smoked salmon and cheddar cheese evenly over the eggs.
  5. Sprinkle with chopped chives.
  6. Fold the omelette in half and cook for another minute, allowing the cheese to melt.
  7. Serve immediately, perhaps with a side of greens.
