A Simple Irish Comfort Soup
Description: Roasted Onion & Thyme Broth is a light yet deeply flavourful Irish-style soup made by slowly roasting onions until caramelised, then simmering them with fresh thyme. Simple, warming, and restorative, it’s perfect as a starter or a soothing winter bowl.

Ingredients
- 4 large onions, thickly sliced
- 2 tbsp olive oil or butter
- 1 litre vegetable or light chicken stock
- 2–3 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 bay leaf
- Salt and black pepper, to taste
- Optional: splash of cider vinegar or white wine
- Optional for serving: toasted bread or grated Irish cheddar
Instructions
Step 1 – Roast the Onions
Preheat oven to 200°C (400°F). Toss the sliced onions with oil or butter and spread on a baking tray. Roast for 35–40 minutes, turning once, until deeply golden and caramelised.
Step 2 – Simmer the Broth
Transfer the roasted onions to a pot. Add stock, thyme, and bay leaf. Bring to a gentle simmer and cook for 20–25 minutes to allow flavours to develop.
Step 3 – Adjust and Finish
Remove thyme stems and bay leaf. Taste and season with salt and pepper. Add a small splash of cider vinegar or white wine if desired for brightness.
Step 4 – Serve
Ladle into bowls and serve hot. Top with toasted bread or a little grated Irish cheddar if preferred.

- Deeper flavour: Roast onions until well caramelised for a richer broth.
- Clear broth: Strain for a lighter presentation if desired.
- Herb balance: Fresh thyme gives the best aroma.
