POTATO AND LEEK OMELETTE

Ingredients:

  • 3 large eggs
  • 1 tbsp butter
  • 1/2 cup thinly sliced leeks (white and light green parts)
  • 1/2 cup cooked, diced potatoes
  • 1 tbsp fresh dill, chopped (optional)
  • Salt and pepper to taste


Instructions:

  1. Beat the eggs in a bowl, season with salt and pepper.
  2. Heat the butter in a pan over medium heat.
  3. Add the leeks and cook until softened, about 5 minutes.
  4. Add the potatoes and cook for another 2-3 minutes, until heated through.
  5. Pour the eggs over the mixture and let them cook until they start to set.
  6. Sprinkle the dill over the top, if using.
  7. Fold the omelette in half and cook until fully set.
  8. Serve hot, perhaps with a simple green salad.
