POTATO AND KALE CAKES

Ingredients:

  • 4 medium potatoes, peeled and boiled
  • 1 cup kale, chopped and sautéed
  • 2 tablespoons butter
  • 1 egg
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Olive oil for frying


Instructions:

  1. Mash the boiled potatoes with butter, and season with salt and pepper.
  2. Stir in the sautéed kale, egg, and flour until combined.
  3. Shape the mixture into patties.
  4. Heat olive oil in a pan over medium heat and fry the cakes for 3-4 minutes on each side until golden brown.
