OATMEAL AND MOLASSES LOAF

Ingredients

  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup buttermilk
  • ⅓ cup molasses
  • 2 tablespoons melted butter
  • 1 large egg
  • Extra oats for topping

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch loaf pan.
  2. In a large bowl, combine the oats, flour, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, molasses, melted butter, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
  5. Transfer the mixture to the prepared loaf pan and smooth the top.
  6. Sprinkle additional oats over the surface.
  7. Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
  9. Cool completely before slicing.

  • Use dark molasses for a richer flavor or light molasses for a milder sweetness.
  • Do not overmix the batter, as this can make the loaf dense.
  • For extra texture, add a handful of oats or sunflower seeds to the batter.
