OATEN SHORTCAKES WITH BERRY COMPOTE

Ingredients

For the Oaten Shortcakes

  • 200g (1 ½ cups) plain flour
  • 100g (1 cup) rolled oats
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 75g (5 tbsp) cold butter, cubed
  • 150ml (⅔ cup) buttermilk
  • 1 egg, beaten (for glaze)

For the Berry Compote

  • 300g (2 cups) mixed berries (fresh or frozen)
  • 2 tbsp sugar (adjust to taste)
  • 1 tsp lemon juice

Instructions

Step 1 – Make the Compote

In a saucepan, combine the berries, sugar, and lemon juice. Simmer gently for 8–10 minutes until the berries soften and the mixture thickens slightly. Set aside to cool.

Step 2 – Prepare the Shortcake Dough

Preheat oven to 200°C (400°F). In a large bowl, mix flour, oats, sugar, baking powder, and salt. Rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the buttermilk to form a soft dough.

Step 3 – Shape and Bake

Turn the dough onto a floured surface and gently pat to about 2cm (¾ inch) thick. Cut into rounds with a cutter. Place on a lined baking tray, brush tops with beaten egg, and bake for 15–18 minutes until golden brown.

Step 4 – Serve

Split the shortcakes while warm, spoon over berry compote, and serve with cream or yogurt if desired.
