MUSTARD CREAM SAUCE

Ingredients:

  • 1 tablespoon butter
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup dry white wine or chicken stock
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

 

Instructions:

Sauté Shallots and Garlic:

  • In a medium saucepan, melt the butter over medium heat. Add the finely chopped shallot and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.

Deglaze with Wine:

  • Pour in the dry white wine or chicken stock, stirring to deglaze the pan. Allow the liquid to simmer and reduce by half, about 3-4 minutes.

Add Cream and Mustards:

  • Lower the heat to medium-low and stir in the heavy cream. Add the Dijon mustard and whole grain mustard, mixing well to combine. Continue to cook the sauce, stirring occasionally, until it thickens slightly, about 5 minutes.

Season and Finish:

  • Add the fresh lemon juice and season the sauce with salt and pepper to taste. Adjust the seasoning as needed to achieve a balanced flavor.

Serve:

  • Remove the sauce from the heat and pour it over your choice of grilled meats, fish, or vegetables. Garnish with fresh parsley if desired.
