MINCE PIES

Description: Mince pies are a beloved Christmas treat in Ireland, featuring sweet, spiced fruit mincemeat encased in buttery pastry. These delightful pastries encapsulate the essence of festive flavors.

Preparation time: 30 minutes (plus mincemeat resting time)

Cooking Time: 20 minutes

Serving size: Makes 12 pies


Ingredients:

For the Mincemeat:

  • 300g mixed dried fruit (such as raisins, sultanas, currants)
  • 100g chopped apples
  • 50g chopped almonds or walnuts
  • Zest and juice of 1 orange and 1 lemon
  • 100g suet or vegetarian suet
  • 150g dark brown sugar
  • 1 tsp mixed spice
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 tbsp brandy or rum (optional)

For the Pastry:

  • 250g plain flour
  • 125g cold unsalted butter, diced
  • 1 tbsp icing sugar
  • 1 egg yolk
  • 2-3 tbsp cold water

 

Instructions:

  • Prepare the Mincemeat:
    • Mix all mincemeat ingredients in a bowl, cover, and let it rest in a cool place for at least 24 hours to allow flavors to meld.
  • Make the Pastry:
    • In a large bowl, sift the flour and add diced butter. Rub the mixture together until it resembles breadcrumbs.
    • Stir in icing sugar, egg yolk, and cold water. Mix until the dough forms. Wrap it in cling film and chill for 30 minutes.
  • Assemble the Pies:
    • Preheat oven to 390°F (200°C)
    • Roll out two-thirds of the pastry on a floured surface and cut circles to line a muffin tin.
    • Fill each pastry-lined hole with a spoonful of mincemeat.
    • Roll out the remaining pastry and cut smaller circles or shapes to top the pies. Press edges together to seal.
    • Brush the pies with a little beaten egg or milk.
  • Bake:
    • Bake for 15-20 minutes until the pastry turns golden brown.
    • Allow cooling in the tin for a few minutes, then transfer to a wire rack.
  • Serve and Enjoy:
    • Dust with icing sugar before serving. These mince pies are delightful warm or at room temperature, perfect for festive gatherings or a cozy treat by the fire.
