LEMON CURD

Description: Lemon curd is a tangy and sweet spread that is made from fresh lemons, sugar, eggs, and butter. It has a smooth and creamy texture and is perfect for spreading on toast, scones, or as a filling for cakes and pastries.

Preparation time: 10-15 minutes

Cooking time: 10-15 minutes

Typically yields 1 1/2 cups of lemon curd.

Ingredients:

  • 3-4 lemons, zest and juice
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, cubed

Instructions:

  1. In a medium saucepan, whisk together the lemon zest, lemon juice, sugar, and eggs.
  2. Add the butter to the saucepan and place over low heat.
  3. Cook the mixture, stirring constantly with a whisk, until the butter is melted and the mixture thickens, about 10-15 minutes.
  4. Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve to remove any lumps or zest.
  5. Pour the lemon curd into a clean jar or container and cover with plastic wrap, making sure the wrap touches the surface of the curd to prevent a skin from forming.
  6. Allow the lemon curd to cool to room temperature before refrigerating for at least 1 hour, or until it is chilled and set.
  7. Serve chilled and enjoy! Lemon curd can be stored in the refrigerator for up to 2 weeks.
